Original Red was first introduced back in 1868 by the Mclhenny family. So they must've gotten the recipe right to still be popular to this day. The sauce wasn't made just for heat but also to help flavor food. A combination of salt, vinegar and red pepper perfected in a 3-year aging process which enhances the flavors of food.
I have a brother-in-law who puts the Original Red Sauce on many foods, especially eggs. Not only does he like the "heat" of TABASCO, he says it makes every bite better, more flavorful.
